Persian Saffron Ice Cream

Ingredients

  • ¼ teaspoon premium saffron
  • 1 pinch sugar
  • 3 tablespoons hot (not boiling) water.
  • 1 teaspoon Rose water
  • Chopped pistachio nuts – as many as you like!
  • 1 litre ready-made vanilla ice cream
  • ½ pack of Iranian Fairy Floss

Method

  1. Bring the water to a boil in a saucepan then take it off the heat and let cool for 5 minutes.
  2. Take the ready-made ice cream out of the freezer and let it sit at room temperature until it softens enough to mix in the ingredients.
  3. While the ice cream is softening, add the saffron and the rose water to the pan of hot water and allow to brew for no longer than 10 minutes.
  4. Pour the saffron-infused rose water onto the softened ice cream and gently combine with a large plastic spoon.
  5. Add your desired amount of crushed pistachios and combine with ice cream.
  6. Place the ice cream back into the freezer and let it freeze until solid.
  7. Serve ice cream in glassware or bowls and add our delicious fairy floss as the perfect topping!
